Shortbread Cookies

We love a good shortbread cookie at our house.  Recently, I was looking for a recipe so that I could make them at home and this is a pretty decent version.  I doubled the batch and did half with the nonpareils and half without...because that's how my family rolls.

1 1/4 c. all-purpose flour
3 Tbsp. powdered sugar
1/4 tsp. kosher salt
1/2 tsp. vanilla extract
1/2 c. unsalted butter
1 Tbsp. nonpareils in any color or match them to a holiday

Preheat oven to 325 degrees F.

In food processor (or in my mixer), combine flour, sugar, salt, vanilla, and butter until combined.  Place dough in bowl and knead until it comes together.  Add nonpareils and knead to combine.

Take 1 Tbsp. parts of dough and roll into a ball.  You can also roll them in sugar before placing them on the baking sheet.  Press down gently with the bottom of a glass.  Place in freezer for 15 minutes.

Bake cookies until they are light brown, about 18-20 minutes.
